Tufts Cummings Veterinary School Guest Speaker Brings Attention to Animal Welfare, Sustainably Raised Food, and New England Family Farms

Southborough, MA -- As part of Tomasso Trattoria's ongoing commitment to naturally and sustainably raised food, guests are invited to a four course wine dinner with naturally raised, milk-fed Azuluna veal at 7 p.m. on Monday, January 29, 2007 at Tomasso Trattoria & Enoteca in Southborough, MA. All proceeds for the $100 per person dinner (plus tax and gratuity) will go to nutrition and fitness programs at Tufts University. Tomasso Trattoria owner, Tom Prince, Chef Tony Bettencourt and Wine Director Lorenzo Savona have teamed up with Dole & Bailey, and Violette Wine Importers to create a special menu with this veal in different preparations paired with just the right wines. Hear the amazing story, from the Azuluna Project Leader, Dr. George Saperstein of the Tufts Cummings School of Veterinary Medicine in North Grafton, Mass., of how the Azuluna veal program was developed, chef tested, and brought to market to the benefit of the environment, animal welfare, food safety/security, nutrition, local small family farm economic stability, public health and consumer choice.

Both Dole & Bailey, a premier supplier of fine meats, seafood and specialty foods, and Violette Imports of Cambridge, MA are committed to the revitalization of farming in healthy sustainable organic and biodynamic ways, and encourage suppliers and growers to engage in these practices. The companies are donating the veal and wine for the dinner.
