Introduction to Italian Cheese & WineA Tasting EventSouthborough, MA -- Join us for an informative, delicious tasting event that will introduce you to the finest of Italian cheeses. An Introduction to Italian Cheese & Wine will be held at Panzano Provviste e Vino on Thursday, January 24th from 6 to 8 p.m. Come in any time during these hours for this complimentary tasting of artisanal Italian cheeses paired with small production, organic Italian wines from Tuscany. Meet cheese expert Benjamin Guertin from Katsiroubas Brothers of Boston who will share with you the unique characteristics and history of each cheese tasted. This tasting is arranged and hosted by our Panzano resident cheese expert, Emily Herman, and wine director, Lorenzo Savona. Panzano, a Tuscan market & wine shop located in the greater Boston area suburbs, is owned by the creators of Tomasso Trattoria & Enoteca, next door. TASTE CHEESESCaciocavallo Silano DOP (Designation of Origin Protected) from Molise, Italy. This cheese has a unique tear drop shape (the ball shaped cheese in the photo) and is known as the “cheese on horseback” since when aging, it is straddled upon a horizontal stick or branch like saddle bags on a horse. The flavor profile is that of an aged provolone. Pecorino Toscano Stagionato & Pecorino Toscano Fresco DOP. Pecorino Tocano Stagionato is an aged sheep’s milk cheese washed with olive oil and aged at least six months in the cellar. The flavor is rich and a perfect balance of milky sweetness and savory. The Pecorino Fresco is a semi-soft cheese, aged only twenty days with a mild nutty flavor. Cacio de Roma, or the “Cheese of Rome” is a semi-soft table cheese made from pure sheep's milk, aged for one month, ivory in color and full in flavor. Cacio is southern Italian dialect for cheese. This cheese is enjoyed at either the beginning or end of the meal and melts exceptionally well for cooking. And, because of its soft texture and mild flavor, it is a big hit with children (big and small!) And more.
