Preparation for the dinner will begin the day before with a whole, heritage breed, Six-Spotted Berkshire pig that will be butchered in the Tomasso kitchen. This Berkshire is a pure breed pig and is raised 100% on pasture from a Certified Humane farm. Each dish on the menu (click here to see it) will be based on the meat from this one pig.
